Spring is so fabulous! Everything around is so ready to burst with energy and life to come. The forsythia, rhododendron and azaleas are beginning their budding branches. Soon we will see flowers sprouting everywhere and the herbs will begin to come to life after a long winter. I am excited to till the garden and shop at the growers market. Our coffers will soon be full of God’s fresh bounty. How blessed we feel to share in all four seasons and enjoy all that they inspire!

I am truly on a Mac & Cheese kick! You can’t imagine all the ideas I have floating around in my head. This one was born out of a big block of horseradish cheese I had in my refrigerator. My Hubby and I love to eat Filet Mignon and Beef Wellington is just a fantastic way to enjoy it. I deconstruct it sometimes so I can make smaller portions of this rich, delicious dish. My Hubby calls it a perfect 10 and I have to say I agree. The Chanterelle mushrooms are in season and oh, so good. They really take this dish over the top! Continue reading

Bizcocho de Caramelo

My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! This dish is so delicious!. Comfort all the way and full of flavor, plus it’s simplicity makes it all the more wonderful. I like to make it when my daughter comes home, it’s one of her favorites. The combination of the unsweetened coconut milk and the spice of the curry make this dish a real winner. I used green peppers which are a great addition, but sometimes I use bok choy.  Continue reading
