Busiate con Zucca & Salsiccia

During our recent visit to NYC, Heidi and I visited Eataly on 5th Avenue to peruse their Italian goods. We both picked up this Busiate pasta and made a plan to each make something different with it…so, for today’s meal I roasted some butternut squash (Zucca) and cooked up some mild Italian sausage (Salsiccia) seasoned with a touch of nutmeg …added a white wine-cream sauce and voilà! Classic Moussaka


We are huge fans of Greek food…I make a lot of it at home and we also head over to our favorite Greek spots a few times a month (Estia Taverna and Black Olive)…but had never made Moussaka at home until this past weekend…I didn’t want to follow anyone else’s recipe – I knew the flavors very well since I’ve eaten it many times at restaurants…so I sat down and wrote my ideas out in my cooking notebook…shopped for all the ingredients ….then gave it a whirl on Sunday afternoon. It turned out superb! Definitely restaurant quality (can I toot my own horn and say even better than restaurant quality?!) I roasted the eggplant and baked the layer of potatoes before assembling the remaining layers; bringing out the delicious flavors of both, while the beef simmered in a tomato sauce seasoned with cinnamon, allspice and ginger. The final layer is a custard-like béchamel sauce topped with a mix of shredded cheeses…truly scrumptious! Continue reading

‘The Wedgie’ Revisited

In my early college years at IUP, Indiana University of Pennsylvania, there was this little pizza shop called Romeo’s within walking distance of campus that we loved to frequent. The most popular item on the menu and something I had never heard of before was…’The Wedgie’. It was a pizza and a hoagie combined. I shared a Wedgie recipe back in 2015 but for today’s post I decided to make it with the new store bought Cauliflower Crust Pizzas that are in the frozen section at my local grocery store. Southwest Chicken Chopped Salad

Recently when visiting Washington DC we stopped for lunch at the Sculpture Garden Pavilion Cafe at the National Gallery of Art. On the menu was a Southwest Chicken Salad that not only looked good but tasted delish! I wanted to go back there the next day since I couldn’t stop thinking about it…but alas…we ended up at Hill Country BBQ – another great place to eat if you’re a big fan of brisket & ribs. But I couldn’t get that salad off my mind…so of course I had to make it at home. It turned out fabulous! The combination of flavors was just perfect…perfectly grilled southwestern-spiced chicken, fresh avocado, charred corn, black beans, crispy shallots, cotija cheese all piled on fresh salad greens and drizzled with chipotle-ranch dressing and bbq sauce…oh my!
