This is not only good for Thanksgiving, but it’s good for dinner parties, Christmas and Brunch. I’ve been known to make it with broccoli and bacon, string beans and deli pancetta and even pears and blue cheese. The result is the perfect little bundle for each person. Easy to prepare in advance and a real crowd-pleaser. Continue reading

Pasta e fagioli

The weather has been getting colder and colder (no kidding, it’s almost winter!) – so for today’s post I’m sharing a Pasta e fagioli recipe that I’ve had for over thirty years…it’s a little different than the ‘usual’ Pasta e fagioli as I use Andouille sausage to add a bit of heat…instead of regular elbow noodles or ditalini pasta I substituted Ronzoni’s Gluten-Free Elbow Pasta. This soup is absolutely delicious and perfect for cold days…it would also be a great dinner for the evening before Thanksgiving – served with a crusty bread it feeds a small crowd. Happy Thanksgiving to all! Continue reading
Egg In A Squash Hole

Our morning Thanksgiving breakfast used to consist of bagels with all the fixings. Well, we do things a little lighter these days – so I was experimenting on ways we could have a healthier breakfast with a little Fall twist; I decided to make eggs in squash holes. Simple for the big day and healthy. Very delicious! Continue reading
Bangers & Mash

We have this cozy English Pub in Philadelphia that serves the best British fare in the area. It’s actually one of Heidi’s favorite restaurants! The Dandelion serves comfort food in a warm, charming setting. We recently met Heidi and her Hubby there to celebrate her Birthday. That evening it was a beautiful night and we sat outside; two weeks later we took my son to celebrate his 21st Birthday and sat inside, upstairs in a quiet comfortable cubby. Bangers and Mash is what I ordered both times. They’re so tasty I decided to give them a go at home. They turned out wonderful… Continue reading
Spaghetti Squash Pizza

I saw this spaghetti squash pizza idea and decided to give it a try for myself. I had to tweak the recipe a little for it to work for me, but I wanted to share it because it’s truly delicious! My Hubby said he preferred it to a regular pizza crust. I’m not sure I completely agree, I love my carbs but it was really, really good and super healthy. Continue reading

Rosemary Shrimp Skewers With Romesco Sauce

Who doesn’t love brunch, and not just for the Mimosas and a yummy Bloody Mary! When I had a Brunch recently I wanted to serve the shrimp a little different than the usual cocktail; a way that would still impress, could be made in advance, be without much effort and still taste delicious. I remembered a shrimp dish I made a long time ago using rosemary stalks as the skewers. My garden still has lots of rosemary. I also had just made a big batch of roasted red peppers… Presto, the dish came together!!! Don’t you love when that happens? Continue reading

Buffalo Chicken Sliders

We had a huge bonfire with lots of friends and once again I made my Sliders like before. This time I decided I would make them with a little heat. They were great and another crowd-pleaser. Next time I think I well try them with Linda’s Reuben Sandwich… Yum! Continue reading
