My mother always fried her meatballs before she put them in the sauce, but I don’t. I put them into the sauce raw and let them flavor the sauce. Take note, I don’t use a fatty meat. We’ve been going to a lot of Holiday Parties lately…So much rich food…Tonight we have a night off from the party-circuit and we’re taking it easy. We needed something healthy that has flavor – because you know, sometimes healthy is boring! But not these Salmon Burgers…they are healthy – an excellent source of omega-3 fatty acids, vitamin B12, vitamin D and selenium along with niacin, protein, phosphorus, and vitamin B6, not to mention choline, pantothenic acid, biotin, and potassium. If you’re anything like me you are already gearing up for the Christmas Holiday. I’m tweaking ideas for the many dinners we will be having and the easy dishes for the Big Day! It’s good to have a trial run with your recipes that you intend to make for your guests if you want to do new things. Knowing in advance how it turns out will just make you look like a pro to family and friends. It will also tell you if it’s too complicated for a crowd and how you can make it more simple. My hubby and I love this appetizer and we sometimes have it for our entire meal. I’m making this as the salad for my Christmas table with one pear instead of two, but it can also be served on a platter as an appetizer.
