When my husband works from home I have to come up with some clever lunches to keep him happy. This is one of his favorite salads – sometimes we’ll order it from a local restaurant, Blue Plate, and sometimes I’ll make it quick at home…It’s so easy to put together… Continue reading
I recently started making my own ricotta cheese and I just can’t get over how easy it is and how much I love it! So for today’s dish I combined two of my favorite Italian dishes together – ravioli and scampi. Grill a lemon and add a little veggie and you have a wonderful meal. My Hubby enjoyed every delicious bite… Continue reading
I recently bought a jar of Lavender just to see what I could do with it… First up, a creamy smoothie with banana, Greek yogurt, honey and vanilla…delicious on its own but add a hint of Lavender and it goes ‘Pop’!! A great little breakfast treat or afternoon snack… Continue reading

This dish is so good and so easy – the hardest part is having to wait for the chicken to marinade. I like to wrap them up in some tortillas with a good salsa and a little lettuce. Simple, healthy and delicious! Continue reading

If you’re serving shrimp – try this method…and the sauce is better if made a day ahead, which is always nice… Continue reading
Sometimes we head over to the Cinder Bar, a local eatery & bar for a quick bite to eat. I will usually order the Short Rib & Caramelized Onion Flatbread. It’s a really tasty pizza…so recently, when I had some leftover Vaca Frita I decided to make my version at home for lunch…delicious! It’s great for a tasty lunch or in place of Friday night’s pizza… Continue reading

It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. He never eats the rice so I just thought…peppers… rice… stuffed pepper soup! I used ground turkey because that’s what I had on hand. It turned out so good and my Hubby went wild for it!
