Who doesn’t love brunch, and not just for the Mimosas and a yummy Bloody Mary! When I had a Brunch recently I wanted to serve the shrimp a little different than the usual cocktail; a way that would still impress, could be made in advance, be without much effort and still taste delicious. I remembered a shrimp dish I made a long time ago using rosemary stalks as the skewers. My garden still has lots of rosemary. I also had just made a big batch of roasted red peppers… Presto, the dish came together!!! Don’t you love when that happens? Continue reading

Buffalo Chicken Sliders

We had a huge bonfire with lots of friends and once again I made my Sliders like before. This time I decided I would make them with a little heat. They were great and another crowd-pleaser. Next time I think I well try them with Linda’s Reuben Sandwich… Yum! Continue reading
NY Style Reuben Sandwich
This is one of my son Gabe’s favorite sandwiches. Every time he comes to NYC with us he finds a new place to try one. He loves it piled really high with the Corned Beef but when I make it at home I try not to add too much meat to his sandwich! He loves it anyway…

Tuna Noodle Stuffed Peppers

Our garden is still producing copious amounts of green peppers. I am literally overflowing with them. Stuffed pepper soup along with stuffed peppers, western omelets and green pepper salads have been on the menu. Trying to think of new ways to use them has become a daily challenge. Well yesterday I was also missing my grandmother and whenever I think of her I always think of my Classic Tuna Noodle Casserole… It was one of her favorites. So I decided to make it, but instead of a casserole, I would stuff the peppers with it. Turned out to be really good. I love when that happens! Click on the Classic Tuna link to read a little bit about my Grandmother. She was an amazing women! Continue reading

Asparagus And Potato Strata

A strata is a great dish to serve when you are having a brunch and need an easy make-ahead meal for a group. I made this strata for a group of friends to close out the summer. Served at room temperature with a salad, I was able to enjoy my friends without worrying about the kitchen. It turned out to be a slightly overcast day, but we had a lot of fun anyway. Continue reading
Oven-Dried Tomato & Charred Corn Risotto
I recently had an Oven-Dried Tomato & Jersey Corn Risotto at a local restaurant…it was super yummy! None of the ingredients were listed, so when I got home I made some notes about the flavors that I remembered tasting…for today’s post I recreated that lovely risotto at home…is it too vain of me to say mine was better? It was – sorry Mr. Local Restaurant! Continue reading
Sliders Two Ways: Cheese Steak & Cuban

Linda and I were recently at a family gathering where we had around 80 people to feed. When that happens I source some of the food to catering and then go to very simple appetizers, dips and crackers. Also, I have a perfect and easy way to make sliders. I get the Hawaiian style rolls – but in the butter roll not the sweet rolls – and make sandwiches. Always a hit and not a lot of fuss for me! Continue reading
