Talk about comfort food… I am in love with this soup! Hearty and light, simple and delicious! I used spinach to finish it off this time because that’s what I had, but you can use escarole for a little crunch. You can also add chicken and tomatoes if you don’t want to use ham. I seriously recommend giving this soup a try… Oh, by the way it’s always better the next day.
I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!

Who said vegetable soup can’t be fun?! I love to use my leftover meatloaf for sandwiches mostly, but sometimes I use it to make a great vegetable soup. With some fresh veggies and a little potato I just love it. This time I added a little flair with a Mexican spin. Fiesta seasoning at the end really gives this soup a kick of fiesta fun! We love our Fabulous Fare Sisters corner of the web and definitely want to continue sharing our love of food and our tried and true recipes with you. As very active wives and mothers and because Fabulous Fare Sisters has given us new avenues to explore, we have decided to devote more time to exploring these opportunities…therefore starting tomorrow Fabulous Fare Sisters will be posting twice a week – on Tuesdays and Thursdays and no longer continue our Week in Review. I have to admit that three years ago I had NO idea what Pho was. Not until I took my son to Philadelphia for his 20th birthday did I find out. My son, (now 23) loves all things Asian and insisted we find Pho while we were in the city. I’m game to try practically anything, so we researched to find the best in the city!
