Sadly the garden is coming to an end and the bounty is getting lighter, but my pepper plants are surprisingly still abundant. With so many peppers I decided to make my Chicken Cacciatore! I love the flavor that the green peppers give this timeless dish! Continue reading

Roasted Sweet Potatoes with Feta, Thyme & Pine Nuts
My son brought home an enormous sweet potato and it just sat there, waiting for me to make something with it…I kept looking at it in the basket, taking up so much space, but couldn’t figure out what I wanted to do with it…in the meantime, I’m always getting emails from Williams-Sonoma – I really like that store and enjoy browsing through their website – and so one day I clicked on their recipe finder and typed in sweet potato…up popped this recipe that looked pretty good to me…I had all the ingredients at home and decided to make it for a side dish to my Lemon-Garlic Chicken Thighs. It turned out pretty tasty. So, if you’re in the mood for something different, this one’s for you… Continue reading
Salmon Cobb Salad

A while back Linda made an excellent Cobb Salad with a twist of her own. Today I made one with my twist … Salmon and my lemon vinaigrette. Whenever my Hubby cooks for me it’s always salmon, so I used the leftovers, and instead of hard boiled eggs, I made them soft. Just delicious! Continue reading

This is one of those delicious Greek-style dinners that’s sure to please…what’s not to love about juicy chicken thighs marinated in a lemon-garlic sauce? Braised in that same lemon-garlic sauce along with fresh zucchini and then grilled for the final minute or two to give them those beautiful grill marks – brushing them with the sauce along the way…then topping it all with a cool Taztziki Sauce…tasty perfection! Continue reading

Peach & Pancetta Flatbread
For lunch I made this quick flatbread…I saw something like this on the specialty board of a local restaurant’s menu a few years back and have been wanting to make it ever since…the end result was fantastic…delightful combination of sweet and savory…perfect for lunch or an easy dinner… Continue reading
Mediterranean Hummus Platter: Revisited

Today I’m revisiting one of my favorite summer platters – this one is perfect to serve at your next barbecue…Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation. Continue reading
