A strata is a great dish to serve when you are having a brunch and need an easy make-ahead meal for a group. I made this strata for a group of friends to close out the summer. Served at room temperature with a salad, I was able to enjoy my friends without worrying about the kitchen. It turned out to be a slightly overcast day, but we had a lot of fun anyway. I recently had an Oven-Dried Tomato & Jersey Corn Risotto at a local restaurant…it was super yummy! None of the ingredients were listed, so when I got home I made some notes about the flavors that I remembered tasting…for today’s post I recreated that lovely risotto at home…is it too vain of me to say mine was better? Linda and I were recently at a family gathering where we had around 80 people to feed. When that happens I source some of the food to catering and then go to very simple appetizers, dips and crackers. Also, I have a perfect and easy way to make sliders. This salad is divine! Made almost out of desperation… On Wednesdays my hubby usually has lunch with his business partner and I fully anticipated that, until I got his text while I was on the incline trainer… “Lunch with my princess today”… (the best man ever!)… I had not planned on lunch. While I jumped off the trainer and Hubby jumped on, I went to work on figuring out lunch. With what I had on hand I made this accidental amazing salad! Really delicious! Continue reading
Now that we’re all back in the swing of school and busy schedules eating breakfast sometimes takes a backseat to getting out of the house! These yummy little quiches can be made ahead and popped in the microwave right from the freezer. They can also be served as bite-sized appetizers or afternoon snacks. Multi-purpose mini morsels…doesn’t that sound perfect? Continue reading
