Eggnog Pancakes

Eggnog Pancakes
Eggnog is a delightful drink that’s available during the holidays! It has such a unique flavor that I adore…so I decided to make some homemade pancakes for breakfast that incorporate this delicious unique flavor…I loved the way they puffed up in the skillet and were so dense…yummy! They would be the perfect breakfast to add to your seasonal menu… Continue reading

Salmon Burgers

Salmon Burgers

We’ve been going to a lot of Holiday Parties lately…So much rich food…Tonight we have a night off from the party-circuit and we’re taking it easy. We needed something healthy that has flavor – because you know, sometimes healthy is boring! But not these Salmon Burgers…they are healthy – an excellent source of omega-3 fatty acids, vitamin B12, vitamin D and selenium along with niacin, protein, phosphorus, and vitamin B6, not to mention choline, pantothenic acid, biotin, and potassium. Wow! Who knew one thing could have so much good in it…No wonder it’s a favorite among so many people. Okay, so these Salmon Burgers hit the healthy spot, but do they have flavor? Yes! These Salmon Burgers have a wonderful Latin flavor…Hope you give them a try… Continue reading

Homemade Gnocchi In A Classic Marinara Sauce

Homemade Gnocchi In A Classic Marinara Sauce

Okay, I think it’s fair to say that since Thanksgiving I’ve been on a sort of Italian kick. So today I made my homemade Gnocchi. I used to make this with my daughter as my helper because it is a process to make and her favorite dish. Alas, she is grown, moved away and enthralled in planning a wedding… so today I made it alone. No worries…with a few altered steps (the freezer) it was a cake walk… a messy cake walk, but still cake…well gnocchi, but you get what I’m saying… Continue reading

Pappardelle with Roasted Butternut Squash & Sage Sauce

Pappardelle with Roasted Butternut Squash & Sage Sauce

Today is MEATLESS MONDAY! Last time I visited New York City I stopped by Eataly and grabbed a bag of  my favorite Pappardelle. For some reason I have a really hard time finding this pasta near my home so every time I can I’ll stop by there and pick up a bag. These long pasta ribbons are perfect for this roasted butternut squash & sage sauce on this cool December Meatless Monday… Continue reading

Bundle Wrapped Pear Salad

Bundle Wrapped Pear Salad
If you’re anything like me you are already gearing up for the Christmas Holiday. I’m tweaking ideas for the many dinners we will be having and the easy dishes for the Big Day! It’s good to have a trial run with your recipes that you intend to make for your guests if you want to do new things. Knowing in advance how it turns out will just make you look like a pro to family and friends. It will also tell you if it’s too complicated for a crowd and how you can make it more simple. My hubby and I love this appetizer and we sometimes have it for our entire meal. I’m making this as the salad for my Christmas table with one pear instead of two, but it can also be served on a platter as an appetizer. I hope you enjoy this simple trial run with me… Continue reading

Mango-Lime Tres Leches Cake

Mango-Lime Tres Leches Cake

Tres Leches Cake is a favorite dessert in our house, as I have mentioned quite a few times. When my second son came home from Atlanta for a visit, I asked him what he wanted me to make for dessert. He asked for something with mango and lime. So that got me thinking, why not make our favorite dessert but flavor it with mango & lime? Here is what I came up with – and the best part was that when the time came to make it he decided to help! The results?Another winner!    Continue reading

Roasted Rosemary & Smoked Paprika Nuts

ROASTED ROSEMARY & SMOKED PAPRIKA NUTS
If you’re like me, you have several Christmas Parties and Dinners to attend. Yes, a bottle of wine is always the go-to, but here is a little something to give the hostess with your wine. These nuts are so good I’m practicably addicted! The yield is a lot so I also make them in a gift bag for the girls in my hubby’s office with a little round of Brie and a 4 oz jar of my Cranberry & Apricot Chutney. They are always so busy I like to give them something to take to any parties they may have to attend. It’s like a gift for them to keep or share. I also make them a bottle of homemade Kahlua, but that’s for another day… Continue reading

Swedish Meatball Chowder

Swedish Meatball Chowder

Quite a few years ago I made my first venture oversees…to Sweden! It was a beautiful time of year – not yet cold enough for heavy winter coats – kind of like today’s weather here in NJ. Heavy sweater weather…while in Sweden I got my first taste of their cuisine. Crisp, clean flavors with a touch of tart. Very simple yet appetizing. I’ve brought the taste of Sweden home with this flavorful soup… Continue reading
