Deconstructed Beef Wellington With Chanterelle Mushrooms

Deconstructed Beef Wellington With Chanterelle Mushrooms
My Hubby and I love to eat Filet Mignon and Beef Wellington is just a fantastic way to enjoy it. I deconstruct it sometimes so I can make smaller portions of this rich, delicious dish. My Hubby calls it a perfect 10 and I have to say I agree. The Chanterelle mushrooms are in season and oh, so good. They really take this dish over the top! Continue reading

Bizcocho de Caramelo

Bizcocho de Caramelo

My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! So I concocted my own Bizcocho and named it ‘Bizcocho de Caramelo’.   Note: This dessert has been featured on Fiesta Friday! Continue reading

Coconut Curry Chicken

Coconut Curry Chicken 7
This dish is so delicious!. Comfort all the way and full of flavor, plus it’s simplicity makes it all the more wonderful. I like to make it when my daughter comes home, it’s one of her favorites. The combination of the unsweetened coconut milk and the spice of the curry make this dish a real winner. I used green peppers which are a great addition, but sometimes I use bok choy.  Continue reading

Pepperoni & Ham Pizza

Pepperoni & Ham Pizza

Years ago my parents gave us a Bread Maker machine for Christmas. I can tell you that this is one great gift and it has gotten a lot of use! We’ve made all kinds of breads, specialty breads, pretzels & cinnamon rolls…but by far, everyone’s favorite and the most-often thing to come out of our Bread Maker machine is pizza dough! In just 120 minutes we’ve got two ready-to-go pizza dough…thick or thin, your choice…toppings, your choice. But always a winner! I’ll be sharing a meatless pizza on Friday – so stay tuned! Honey Mustard & Panko Crusted Satay

Honey Mustard & Panko Crusted Satay
Whoever thought of putting food on a stick was a genius. It’s great for parties or just because you can. I’m having another girls get together and wanted something easy, yummy and reasonably healthy. All my friends have had my Rosemary Chicken Satay, so this time I’m giving them a little crunch with the panko crust and a little sweet with the honey mustard.  Continue reading

Sancocho

Sancocho

This traditional chicken soup warms the cockles of your heart…and your hangover, if you’ve got one! I first had a Sancocho in Panama many years ago and have a bowl every time we go back to visit. Recently I saw frozen Yucca in our local supermarket and popped it in my cart to make this delicious soup at home. It’s my husband’s favorite reminder of home and he was so happy that I made it for him! We usually serve Sancocho over a bowl of cooked rice…yum!  Continue reading
