Mole Poblano is an ‘old fashioned’ Mexican sauce that goes way, way back. It’s not as popular as it once was (so I’m told) and I’m not sure why…because it’s truly a great sauce! The combination of the heat of chipotle pepper and the sweetness of chocolate is perfect together. I usually serve my Chicken Mole Poblano with a delicious Coconut Rice. Every summer when we were little my parents took us up to ‘the house on the hill’ to visit family. The House on the Hill was the home of my grandmother on my father’s side. She was one of thirteen children! She and my grandfather lived in Philadelphia year-round but during the summer they would head up to her family home and we would all spend time with cousins and aunts and uncles. I have the fondest memories of those summers…the fun, the freedom, the food!
