Ham & Cannellini Bean Soup

Talk about comfort food… I am in love with this soup! Hearty and light, simple and delicious! I used spinach to finish it off this time because that’s what I had, but you can use escarole for a little crunch. You can also add chicken and tomatoes if you don’t want to use ham. I seriously recommend giving this soup a try… Oh, by the way it’s always better the next day.

I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!

When I lived in Philadelphia I would go almost every day to a corner vendor for a Philly soft pretzel for lunch. I’m sure it wasn’t the best thing to do, but it certainly fit my college budget! I sometimes get the hankering for a good homemade soft pretzel. Today I made them a little different. I added pepperoni and cheese!!! Serve with some cheese dip and a little marinara and you have pizza in a pretzel. Talk about good! Every year at Christmas my Hubby gets an enormous whole ‘bone-in’ ham from one of his clients.
