This is a nice dish to make when you have guests over. It can be prepped in advance so when your guests arrive it only needs a quick sear and a toss in the oven. It’s also good for lunch with the girls as small plates. All I did was slice them up when done and served just a few slices with salad on the side. They go a long way and are loved by all. Today I’m sharing a Meatless Meal…this is one of my favorites…I get it all the time when I see it on restaurant menus but in all honesty they’re so covered with sauce that it’s sometimes hard to taste the eggplant. When I make it at home I cook it with as little oil as possible and top it with just a smidge of sauce and cheese so the eggplant can shine… Continue reading
Our local pizza & sandwich joint has a very tasty Flank Steak Panini on their menu that I’ve been ordering for years. I finally decided to just make it at home – tweaking it until it was just right. I’ve never been a big fan of flank steaks because they end up being very fatty…so I use sirloin instead, marinating it and grilling it and adding sautéed marinated red onions, sharp cheddar cheese, tomato, arugula and a smear of black pepper aoili…all piled on toasted rustic sourdough bread…This is the perfect pick-me-up when I’m in the mood for a tasty lunch! Date nights are my favorite nights!!! I love to get all dolled up for my Hubby and go out for a glass of wine and a little bite (that I didn’t have to cook!)…One of the dishes we get at Moon & Raven Public House is their Sautéed Calamari. Well, it’s tax season and my excellent Hubby is a CPA. He and his partner, along with their excellent staff, are cranking day and night- so Date Nights Out are a little more rare. Wanting to have Sautéed Calamari, I decided to come up with a dish of my own inspired by one of our favorite dishes. Late Night Date Night at home… Continue reading
This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! Sometimes I drizzle a balsamic glaze over the platter and it adds a bit a sweetness. Any way you make it it’s fabulous! Continue reading

My Hubby loves mashed potatoes… He would eat them every day if I made them. Well instead of mashed potatoes this time I made very creamy polenta. Granted it takes a little longer to reach this perfect creamy consistency, but the flavor of the polenta is rich and delicious. Pair it with some seared scallops and you have greatness! Last week when I made the Southwest Chicken Salad I had leftover ingredients so I decided to use them to make a Chicken Tortilla Soup…it turned out delicious…I love when that happens! Homemade soups are just perfect to serve on cold winter days. They warm you up quick and are so healthy! Continue reading

Great for cold winter days, either choice will make a great lunch. My hubby preferred the Creamy Sage and I preferred the Curry. Healthy, full of fiber and just plain good! Continue reading
