Baked Shrimp With A Lemon & Tarragon Mayonnaise

I like to entertain, but I do try to keep things simple. Baking the shrimp instead of boiling them takes way less time and ends up perfect every time. Then, instead of the same old cocktail sauce (although I served that too), I made a mayonnaise-based sauce for dipping. My guests went crazy over it and the cocktail sauce was left untouched! The best part was that this time I got to share it first-hand with my Fabulous Fare Sister…Linda…she was there too! Stuffed Pepper Soup

It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. The story goes that a beautiful woman stayed at an Inn in a small town in the Providence of Modena. The Innkeeper was so captivated by her beauty that during the night he peeked through the keyhole to her room and saw only her navel…inspiring him to create this noodle. Crazy story! Sage & Mushroom Stuffed Chicken Roulade

This is a nice dish to make when you have guests over. It can be prepped in advance so when your guests arrive it only needs a quick sear and a toss in the oven.
