As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese.
