Chicken Lo Mein

I received a BIG box of farm-fresh vegetables…so big that we had an abundance of veggie meals day after day. Some of them made it into this tasty dish. Turns out this was a great breakfast appetizer and is great at room temperature too…  Continue reading

Chicken Burger with Roasted Ratatouille

With the remaining Jersey Fresh Produce from my recent Ride the Farm event, I’ve deconstructed a Ratatouille and roasted all the veggies together, grilled some seasoned chicken burgers and topped them with the roasted ratatouille – making this meal not only absolutely delicious but definitely healthy!
