Pork Tenderloin With A Sage & Onion Cream Sauce

Making a delicious quick and elegant meal doesn’t have to take all day. Pork tenderloin is the perfect meat to serve when you are lean on time but want to impress. Served with some herbs in a simple white sauce and you have another winner…

Pork Tenderloin With A Sage & Onion Cream Sauce
1 pork tenderloin
1 Tbs olive oil
2 Tbs butter
2 large onions sliced
2 Tbs flour
1 bunch fresh sage (about 1/4 cup)
1 bunch fresh parsley (about 1/4 cup)
1/2 cup white wine
1 cup whole milk or cream
salt & pepper

Cut the onions in half and slice into half rounds. In a saute pan melt butter and sweat onions until tender. Add the wine, salt & pepper and cook for additional 2 to 3 minutes. Next add flour and cook additional 2 to 3 minutes.

Add the milk, sage and parsley. Cook until the sauce starts to thicken. In a cast iron skillet, heat olive oil and season pork with salt & pepper. Cook for about 6-8 minutes on each side (pork tenderloin has 3 sides and is best served medium).

Top with onion and sage sauce and eat. I serve this with rice on the side. Simple, elegant yet delicious!

Sauteed Radishes

I doubt I’m the only person who sautes radishes, but I am the only person I know who does. When our garden starts popping these beautiful little spicy bites, I get excited. They are delicious when plucked straight from the garden and they have a peppery bite to them. Also the health benefits to radishes are many. Dijon Marinated Sirloin

Saturday night steak night! With all guys in the house (except me!) steak is on the menu more often than it should be…This sirloin was scored in a crisscross fashion then allowed to marinate for at least 30 minutes…the scoring allows the marinade to fully penetrate the entire sirloin. Turkey Thigh Cacciatore

When I saw these beautiful large turkey thighs I couldn’t help but think… ‘Cool, I bet these would make a great Cacciatore. And sure enough, they did. Delicious in fact. I have two secret ingredients that I add in my Cacciatore and I am going to share them with you today. This is a great dish to make for a crowd. You can prepare it ahead and let the oven do the rest. I love making meals that allow me to enjoy my guests. So if you are making it for a crowd use a cut-up chicken or chicken thighs instead. Hello Wednesday! I really don’t feel like going to the supermarket…so, what can I pull out of the fridge to make a quick meal? Well, I’ve got some leftover Prosciutto from the other day’s Asparagus wrapped with Prosciutto and some frozen boneless chicken breasts and some root vegetables that need to be used up… What could I use that for? Heidi’s French Onion Soup

 

I can never get enough French Onion Soup! I was about 10 the first time I tried it… but from my first bite, I was sold. We ate out a lot when I was growing up and for years I ordered it every time I saw it on the menu. Even now, I am still tempted when I see it. I assure you that I have had enough onion soup to make me quite the connoisseur. By the time I was in 11th grade I decided to make it at home.
