Who doesn’t love brunch, and not just for the Mimosas and a yummy Bloody Mary! When I had a Brunch recently I wanted to serve the shrimp a little different than the usual cocktail; a way that would still impress, could be made in advance, be without much effort and still taste delicious. I remembered a shrimp dish I made a long time ago using rosemary stalks as the skewers. My garden still has lots of rosemary. I also had just made a big batch of roasted red peppers… Presto, the dish came together!!! Don’t you love when that happens? Continue reading

Today my Hubby and I enjoyed a delicious poached chicken and grape dish. I was in the mood for a kind of Waldorf salad, but didn’t want to go to the store so I used what I had in the kitchen. Making the simple pocket saves the struggle of stuffing the whole loin and is a simple solution for a quick dinner night. Stuffing the whole loin is great for a crowd, but the pocket is great for 2 -4 people for dinner! Continue reading
As today is the third Friday in Lent – for today’s meatless dish I’ve made a scrumptious Roasted Tomato Salad…The flavors of this salad combined with the Honey Dijon Vinaigrette is so good that I usually serve myself a second helping…and wish I could take even more! Continue reading

So I bought too much turkey bacon which always forces me to try to think of ways to use what I over buy or make. I remember having Praline bacon once and decided ‘Yes’! So here we go… I love being my own Guinea pig! Continue reading
