This is a dish my mother made for us growing up. Probably created from one of those 70’s throwback cookbooks. I often cringe at some of the ingredients they recommended. Obviously ‘processed’ was the star in every dish. It was surely economical for a family of six however, and mother was always health conscious. I will admit that when I was 7 and this plate was put in front of me… I know I made an awful face!… Alas, we grow up and learn to love the very dishes we shunned as kids. If you’ve been following Linda and I for a while now, you know that I am gifted several hams by my hubby’s clients every year. I have had to make ham in so many ways my brain hurts…but this is my favorite! I actually served this dish at a Small Plate Dinner on an evening we had guests. Saturday night we had cocktails at our home with my parents and my Aunt Kathy and Uncle Fred. I love when they visit because we always have such a fun time. ‘THE WEDGIE’, No Laughing Allowed!

When I was in college at IUP ‘Indiana University of Pennsylvania’, there was this little pizza shop that a large population of the kids ordered from. The most popular item for the students on the menu and something I had never even heard of before was… ‘The Wedgie’. It was a pizza and a hoagie together. Well, on Friday night I made homemade pizza and I always make too much. So for lunch today I made it, that’s right, I made The Wedgie. The difference between mine and the pizza shop is I don’t use an already made round crust, so mine when finished isn’t exactly a wedge. However, it is still delicious and fun! Continue reading

Winter meets Spring!

I love that spring is here and the snow has quickly melted!! But my refrigerator still has remnants of cold day ingredients along with all my spring ideas. So today I brought them together for a bit of fresh and a touch of comfort.

I am lucky to have the ‘Love of My Life’ come home almost every day for lunch, so we can share my creations together. Today we started our lunch with a hearty yet healthy salad. Meatless but full of flavor!
