Roasted Green Beans & Red Onion Salad
I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!

Green Beans with Pistachio Gremolata
If you’ve never tried Gremolata before you really should. Gremolata is a garnish that combines chopped parsley, garlic, and lemon zest. Many times pine nuts are added to pump up the flavor but I decided to use pistachios instead. Sprinkled on top of fresh green beans it’s really, really good. Honey-Lemon Glazed Chicken, Rice Pilaf & Green Beans with Sautéed Shallots
It was a perfect day to fire up the grill for the first time this spring! Our local supermarket had a great sale on chicken breasts and legs so I stocked up! Some went right into the freezer but these were perfect for this recipe. Marinading them while the grill was getting hot and then basting them during the last ten minutes added a boost of flavor! The rice pilaf and string beans can be prepared while the chicken is grilling. Since the chicken is on the bone it takes about 45-60 minutes to grill so enjoy the time with a glass of red wine!
