This dish is so delicious!. Comfort all the way and full of flavor, plus it’s simplicity makes it all the more wonderful. I like to make it when my daughter comes home, it’s one of her favorites. The combination of the unsweetened coconut milk and the spice of the curry make this dish a real winner. Years ago my parents gave us a Bread Maker machine for Christmas. I can tell you that this is one great gift and it has gotten a lot of use! We’ve made all kinds of breads, specialty breads, pretzels & cinnamon rolls…but by far, everyone’s favorite and the most-often thing to come out of our Bread Maker machine is pizza dough! I think I’m kind of into chicken cutlets right now. There are times in the year when my hubby has to work really late and I always wait to eat with him. I’ve found I can prepare the cutlets in advance. They cook up super fast and are light for late evening dining. I have had to make ham in so many ways my brain hurts…but this is my favorite! I actually served this dish at a Small Plate Dinner on an evening we had guests. Great minds think alike! Heidi shared a great pork tenderloin recipe yesterday and pork is on the menu again today. It’s a healthy alternative to beef!

I really like Jerk seasoning and haven’t made it in a while…with this meal I decided to not only marinate the pork chops in the jerk seasoning but to also make a rice with the same marinade. It turned out great! Here’s another addition to the Pork Night Repertoire!
