Chopped Cobb Salad

For lunch today I’ve prepared a hearty delicious salad. The traditional Cobb salad is typically made with chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette. I’ve substituted grilled chicken thighs for the breast and added my own twist with a Parmesan Peppercorn dressing…very tasty! Continue reading
