This traditional chicken soup warms the cockles of your heart…and your hangover, if you’ve got one! I first had a Sancocho in Panama many years ago and have a bowl every time we go back to visit. Recently I saw frozen Yucca in our local supermarket and popped it in my cart to make this delicious soup at home. This rainy Northeast weather brings the opportunity to make hearty soups. Recently Heidi served her family a Creamy Pumpkin Soup, a Creamy Mushroom, Sherry & Goat Cheese Soup and a Hearty Chicken & Ham Soup and I served my family Sopa de Carne. Well this week, one of my sons was really not feeling well, and as it’s a well known fact that Chicken Soup is the cure-all for everything, I decided to make him a hearty healing pot of soup. This is a week that for a lot of people is a well thought out planned week. Only four days until Thanksgiving… if you count today! Well, I am counting today. I have 30 people coming for dinner so as you can imagine I have to be super organized in order to enjoy my guests and at the same time bring them the best dishes I can. There is a lot to be made, so I always allocate some dishes to the adult kids, nieces and nephews that are excited to be new at participating. When asked, what can I make or do?… I say, ‘can you make coleslaw and do you need a recipe?’ Or ‘how about an apple pie’… how about dinner rolls, ‘can you help set the table’. What to do with leftover chicken? So, the other night I made Honey-Lemon Glazed Chicken and since one of the boys wasn’t home for dinner a huge chicken breast went untouched. But I hate to see anything go to waste! So today I peeled all that delicious honey-lemon glazed chicken meat off the bone and diced it up. I thought about making chicken salad sandwiches for lunch but decided why not use it in a chicken pie? Winter meets Spring!

I love that spring is here and the snow has quickly melted!! But my refrigerator still has remnants of cold day ingredients along with all my spring ideas. So today I brought them together for a bit of fresh and a touch of comfort.

I am lucky to have the ‘Love of My Life’ come home almost every day for lunch, so we can share my creations together. Today we started our lunch with a hearty yet healthy salad. Meatless but full of flavor!
