This traditional chicken soup warms the cockles of your heart…and your hangover, if you’ve got one! I first had a Sancocho in Panama many years ago and have a bowl every time we go back to visit. Recently I saw frozen Yucca in our local supermarket and popped it in my cart to make this delicious soup at home. It’s my husband’s favorite reminder of home and he was so happy that I made it for him! We usually serve Sancocho over a bowl of cooked rice…yum!  Continue reading

This rainy Northeast weather brings the opportunity to make hearty soups. Recently Heidi served her family a Creamy Pumpkin Soup, a Creamy Mushroom, Sherry & Goat Cheese Soup and a Hearty Chicken & Ham Soup and I served my family Sopa de Carne. Well this week, one of my sons was really not feeling well, and as it’s a well known fact that Chicken Soup is the cure-all for everything, I decided to make him a hearty healing pot of soup. This is a week that for a lot of people is a well thought out planned week. Only four days until Thanksgiving… if you count today! Well, I am counting today. I have 30 people coming for dinner so as you can imagine I have to be super organized in order to enjoy my guests and at the same time bring them the best dishes I can. There is a lot to be made, so I always allocate some dishes to the adult kids, nieces and nephews that are excited to be new at participating. When asked, what can I make or do?… I say, ‘can you make coleslaw and do you need a recipe?’ Or ‘how about an apple pie’… how about dinner rolls, ‘can you help set the table’.
