Orecchiette Pasta With Sauteed Tomatoes, Sausage And Fresh Basil

Orecchiette Pasta With Sauted Tomatoes, Sausage And Fresh Basil
The other day I bought a big package of grape tomatoes for a salad I was making for a picnic, the only problem was when I left the house I left the tomatoes too! Ugh… alas, I decided to make a sautéed tomato and pasta dinner the next night. It was very good – so I am sharing it with you. Continue reading

Honey Dijon Rice

Honey Dijon Rice

On today’s menu is a quick and tasty rice. I love to experiment with different flavor combinations. So when I made some pork chops seasoned with honey and dijon, I decided to carry those flavors over in the rice dish that accompanied the meal. Sweet and salty at the same time. Yummy! I’ll share the Honey Dijon Pork Chops on FridayContinue reading

Lemon-Cream Cheese Stuffed French Toast with Fresh Blueberries & Syrup

Lemon-Cream Cheese Stuffed French Toast

I was chatting with my mom on the phone the other day. It was her and my dad’s anniversary and she was telling me all about this wonderful breakfast she had just had at a restaurant. Raving…I mean really raving about it…saying how she hoped it wouldn’t disappear off the menu EVER ‘raving’. As she was describing it to me I thought – well, that doesn’t sound too hard to make…so here Mom – a late anniversary gift just for you! Continue reading

Mini Ravioli Lasagna

Mini Ravioli Lasagna 4
Talk about quick, easy and tasty! This Lasagna has it all!!! I was cleaning out the refrigerator and the freezer when I realized I had over bought ricotta and had a huge bag of mini ravioli in the freezer. Presto, an idea was born and boy was it easy. Layer the ravioli instead of the traditional noodles, why not? … (and you can change it up by using different flavor-filled ravioli!) Continue reading

Chicken Mole Poblano

Chicken Mole Poblano

Mole Poblano is an ‘old fashioned’ Mexican sauce that goes way, way back. It’s not as popular as it once was (so I’m told) and I’m not sure why…because it’s truly a great sauce! The combination of the heat of chipotle pepper and the sweetness of chocolate is perfect together. I usually serve my Chicken Mole Poblano with a delicious Coconut Rice. Give it a go – I think you’ll be surprised not only with how easy it is to make, but how truly flavorful this sauce really is! Continue reading

First In The Garden Baby Green Salad With Ahi Tuna

Baby Green Salad With Ahi Tuna
I wait for this salad every year. There are no better salad greens than the little babies that pop up and need to be thinned out. Arugula so sweet you can’t believe it…and Boston Bibb…there was even little baby greens from our new Bok Choy crop. The only thing I wanted to pair this excellent salad with was a perfectly cooked piece of Ahi Tuna and a very fresh Artisan baguette we picked up this morning from the Farmer’s Market. Portobello Angus Burgers

Portobello Angus Burgers

Ahh…the beginning of summer is here! Memorial Day is a day of celebration with family and friends…and what better item to be on the menu than a big beefy Portobello Angus Burger! These burgers have everything….Angus beef, fresh portobello mushrooms and thick slices of red onion roasted to perfection…smoked mozzarella cheese and a dollop or two of balsamic-mayo sauce. Delicious! Continue reading
