Summer is upon us! One of our favorite things to do in the summer is visit our ‘Creek House‘. With an outdoor fire pit roaring, we all sit around the campfire, laughing and telling tall tales! The kids love to toast marshmallows and enjoy s’mores for dessert. When it rains we substitute S’mores Bars. You don’t need a roaring fire to make these delicious treats!

Cuban Sandwich

On Tuesday I shared a fabulous Cuban Mojo Pork Roast inspired by my husband’s recent trip to Florida – with the intention of making today’s Cuban Sandwiches with the leftovers. I first had a Cuban Sandwich about thirty years ago in Panama at Niko’s Cafe. Since then they’ve been a favorite of mine – but I hadn’t made them in my own kitchen until now. Citrus-marinated pork, thick slices of Tavern Ham, Swiss cheese & Dill pickles pressed between two slices of rustic bread that’s been slathered with Roasted Garlic, Peppercorn & Cilantro Aioli & a dollop of Dijon. 1-2-3-4 1/2 Mac & Cheese

Simple Mac & Cheese 2
I was swapping recipes at a picnic about 15 years ago with a stay at home dad. I’m not one for remembering things if I don’t write them down, but this was one I could remember… 1-2-3-4… Lol! Over the years I’ve changed cheeses to find the perfect creamy combo and I’ve added an extra 1/2 cup of milk for the same reason. I have been known to add herbs, spinach, ham, bacon, chicken, corn and tomatoes … whatever I want to make it a meal. Served here as a side, it is everyone’s favorite.  Continue reading
