Honey, Lemon, Feta & Walnut Pasta

Today is Ash Wednesday – the beginning of the 40 days of Lent for all Christians (not counting Sundays). During these 40 days of repentance we reflect on our lives, the things we have done and our transgressions; praying for forgiveness and observing specific days of fasting and abstinence from meat. Traditionally during Ash Wednesday we fast and abstain from meat, eating just one full meal. We observe Lent to mirror Christ’s 40 days in the desert where He endured temptation.

In light of today’s abstinence and fasting I have prepared a meat-free dish that is healthy, tasty and very filling. Continue reading

Sometimes I like to check out restaurant menus to get ideas for dinner and desserts. The other day I was perusing the menu from Fuego Tortilla Grill in Texas – never been there but would love to visit one day…on the dessert menu I saw Magic Cookies with graham cracker crust, condensed milk, chocolate chips, shaved coconut and chopped pecans…sounded incredibly delicious! Come to find out that the original recipe came from Eagle Brand condensed milk. I’ve made a few adjustments to the original recipe, but they’re truly decadent!    Continue reading

I love the Super Bowl and everybody knows it’s not just the most exciting game of the year, it’s the #1 junk food day of the year! Well it can taste like it’s bad for you and still be a healthy snack. These little bites of chicken wrapped in turkey bacon are just the ticket. I’ve paired them with an apricot jelly barbecue. These little gems are sure to please the big game eaters as well as the calorie conscious, (I used chicken thighs, but the breast meat would make it even lighter) … But just to give you more ideas to go with, Linda and I added some other great appetizer ideas with links at the bottom of the page.

I love chicken especially when its been pounded paper thin, breaded then cooked to perfect tenderness. Chicken breasts tend to be a little dry. My hubby and I prefer the thigh, but when I serve it like a cutlet, it’s always a welcomed dish. I have also found over the years it is an economical and versatile way to use the breast because it serves many more people this way and you can change the seasoning in the breading and the sauce combinations.
