On today’s menu is one of those dishes that can be served either as a main meal or as a side. Farro is a great grain – very filling and healthy. The bacon adds just a hint of smokiness and the butternut squash adds the sweet. You can make this into a veggie-only dish by omitting the bacon. It’s the perfect little bowl of comfort & warmth! Fall off the bone good, I just love how really great this dish is. It packs a real meaty punch, is tender and makes a great gravy. Paired with classic fluffy mashed potatoes it feels like comfort has come knocking. Continue reading
Happy New Year! Hope everyone had a wonderful holiday. We’re starting off this year with a healthy meal…lately I’ve been using my sheet pan to roast whole meals in the oven. Everything from fish to chicken and all kinds of veggies. Such a healthy and easy way to cook with minimal clean up…here’s a tasty meal using wild-caught salmon with the flavors of brown sugar & bourbon… Continue reading
A Tajine is an earthenware pot which is used in many Mediterranean slow-cooked, savory dishes. The Mediterranean diet is touted as a very healthy diet… I try to incorporate this type of meal into our menu at least once a month… slowly introducing the different flavors without too much fanfare…and so far everyone seems to enjoy each dish! On today’s menu is an Eggplant & Chicken dish that is so healthy and delicious – if you don’t have a Tajine simply use an oval shallow casserole dish… Continue reading

My Hubby and I love to eat Filet Mignon and Beef Wellington is just a fantastic way to enjoy it. I deconstruct it sometimes so I can make smaller portions of this rich, delicious dish. My Hubby calls it a perfect 10 and I have to say I agree. The Chanterelle mushrooms are in season and oh, so good. They really take this dish over the top! Continue reading
With Christmas coming up next week, Heidi and I are running around, prepping and getting everything ready! In all the hustle and bustle of the season sometimes you just need a day off with your girlfriends swapping cookie recipes and spending time catching up! For this year’s Cookie Exchange I made these delightful White Chocolate Peppermint Cookies (at the suggestion of my big brother Rob – thanks Rob!) They were a big hit so they’ll be added to The Cookie Jar! Be safe and enjoy the Holidays! Continue reading

Simple is the key some nights…who am I kidding, most nights! Anyway, today I made a simple Italian style Parmesan (Pecorino Romano) Tilapia. This fish does not have a lot of flavor on its own, so it was the perfect fish to use for this flavorful dish. I served it with spaghetti zucchini and a little garlic butter. Continue reading
I love the smell that fills the house when Banana Bread is in the oven! What a delicious use for over-ripe bananas. With or without nuts. With or without a slab of butter melting across a warm slice. Pure heaven! Continue reading
