I made this easy Caribbean Chicken Stew for lunch one day recently and it was well received! I just love trying different spice combinations to ‘visit’ different parts of the world through food. We may not be able to travel right now but I can certainly keep my family’s attention with these creative cuisines! Continue reading

Egg Fried Rice with Ginger, Sriracha Mayo

During this time of isolation I’ve been working on a house to flip. I have an Interior Design background and since it’s not my nature to just sit at home, I bought a house to keep me busy. And busy it’s been. We closed April 30th and I have about a week still of work until it’s done completely. That being said, some nights when I get home I really don’t want to cook. Solution, order out… anyway, we ordered from our local Chinese Restaurant and as per normal there was a lot of leftover white rice. So for lunch the next day I made this… It was delicious! Continue reading
Lomo Saltado
Lomo Saltado…I’m sure a lot of people don’t even know what that is…so let me tell you…It’s pure deliciousness on a plate! A combination of Peruvian & Chinese. I usually order this yummy meal when we visit our local Ecuadorian restaurant El Sitio in Collingswood, NJ. But this time I wanted to try my hand at making it at home…end result – Fabulous! My Favorite Holiday Bites

Thanksgiving is over and we spent ours with some of our children. My daughter-in-law made dinner this year, so I was off the hook! It was a wonderful day and everything was delicious! The only thing was that I missed some of my favorite bites. I still had a turkey at home to cook and I had been dying to try a technique I had heard about to see if it worked. Since I was clear of the pressure to serve it to anyone but my Hubby and I, I decided to go for it on Sunday. To my happy surprise it worked perfectly and I will never make a turkey any other way again! I also made the two sides that I was missing from other Thanksgivings. The Cranberry & Apricot Chutney I cook at Thanksgiving but use it for many Holiday dishes all the way to Christmas and as a gift to Hostesses when I attend parties. It’s great on Brie too! Nancy & Mark’s Eggplant Parm
We recently had our very good friends’ Nancy & Mark’s Eggplant Parmesan and it was absolutely delicious…so I took a quick pic and finagled the recipe out of them…Nancy remarked “They’re the simplest ingredients!” and as you can see they are the simplest ingredients and by applying your own technique you can master this delicious dish. Use fresh eggplants and cut relatively thin but not so thin they fall apart during baking… Continue reading
Charlotte’s Olé Dip
Here’s another one of my friend Charlotte’s appetizers that is always welcome at our get-togethers. In fact, we have to set aside a scoop or two before we put it in front of our guys because it’s usually gone so fast!! Thanks Charlotte for another great dip… Continue reading
Focaccia Art

My kids came home to visit this weekend and my son Dillon wanted to make something with me. I know this Focaccia Art is trending, so I suggested we try to make some ourselves. I took a shortcut on the dough and pulled most of the herbs out of my garden so it was simple and fun, not to mention delicious! Continue reading
Roasted Cauliflower with Shallots & Capers
Here’s a great side dish to serve with any meal…roasting the cauliflower brings out all its wonderful flavor and the sautéed shallots add a bit of sweetness to balance the tartness of the capers… Continue reading
Makhani Chicken
Okay…so I’m on an Indian spice food kick at the moment…I recently made up a recipe for an Indian-spiced Rice which I made again for this meal and I topped it with this sweet tomato-based creamy chicken entree. Makhani Chicken (murg makhani) or Butter chicken is a dish of chicken in a spiced tomato, butter and cream sauce. It originated in the Indian subcontinent…I created my own recipe and it was super delicious! Continue reading
