Chopped Cobb Salad

For lunch today I’ve prepared a hearty delicious salad. The traditional Cobb salad is typically made with chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette. I’ve substituted grilled chicken thighs for the breast and added my own twist with a Parmesan Peppercorn dressing…I’m loving this Chopped Cobb Salad – it’s very tasty! Continue reading

Tuscan White Beans, Italian Kale & Turkey Sausage

I came across this Italian kale while my Hubby and I were shopping at the farmers market and I fell in love. It’s much softer and flat and its stalks aren’t as big and hard as the American variety. If you can’t find it just use regular kale and put it in with the beans after about 10 minutes instead of 20 minutes. These beans are creamy, like mashed potatoes, and the cheese just puts them over the top.  Continue reading

I had a craving for muffins for breakfast and checked my fruit basket…lo and behold a lone ripe pear…so I chopped it up and added it into my traditional muffin batter along with fresh Pomegranate arils…end result was so delicious! I have absolutely fallen in love with Lentil pasta. I’ve been running around telling everyone about it. I buy extra boxes and give them to people I know will feel the same way I do. Like Linda’s pasta last week with the red lentils. My Hubby who is a big pasta lover has even said he prefers the lentil pasta now. So I went out on a limb and made this dish for a small dinner party and didn’t tell my guests they were eating lentil pasta until dinner was almost done.
