Baked Eggs in a Cheesy Bechamel Sauce

baked eggs 3

Happy Easter and good morning!!! This morning I’m up early to make baked eggs… I call them Maria’s Eggs, because the first time I ever had baked eggs was at my brother and sister-in-law’s house. They were yummy and ‘my favorite’, simple. I loved the concept of baking the egg, so I started to play with all the different ways I could serve this little gem. Recipes like this can be made in so many different ways once you have the basic premise. Perfect for a morning like today Easter SundayContinue reading

Sauteed Scallops in Herb Butter with WonTon Ravioli

wrapped wonton

Sea Scallops have to be in my top five for ‘favorite’ ocean fare. I love how sweet and tender they are, but most of all I love how easy and quick they are to prepare. It seems no matter what you pair them with they are elegant and sophisticated. So tonight I paired them with my won ton ravioli. Making my homemade ravioli on occasion is great, (and I will share them with you soon), but tonight I took my favorite shortcut. Continue reading

Rosemary Shrimp on Rosemary Skewers

Shrimp on Rosemary skewer

I love herbs from the garden and that is why I have two herb gardens. Sadly, I have yet to break ground this year. When I am in swing, the garden produces late spring, all summer and early fall, I have a plethora of herbs to cook with and I make sure to use them in everything. However this time of year I have to buy my herbs in the grocery store. The only problem with that is, you have to buy the amount they give you and the rest either goes bad in the refrigerator or you have to use them all… asap! I have a few tips on what and how to use your abundance of store bought herbs. Continue reading

Mushroom & Sage Risotto

IMG_3469

In New York City there was this wonderful little restaurant whose specialty was risotto. The name of the restaurant was Risotteria. It was located in the West Village on Bleecker St. They prepared a multitude of different risottos including a fabulous mushroom risotto. Unfortunately, they’ve closed but they inspired me! I also prepare a mushroom risotto but mine is flavored with andouille sausage along with cremini mushrooms. I top it off with sage sautéed in butter, a sprinkling of Parmesan cheese and a swirl of truffle oil. It’s creamy and delicious…Enjoy!

April Fools!

donut turkey

Okay, So it’s April 1st and we all know what that means. I’m not big on pranks, so I decided to make a spin on dessert. I saw this concept years ago in some magazine to surprise your kids. Well today I decided to make it. I based my recipe on my turkey meatloaf, but without the regular green herbs. That would be a dead give away. So the seasoning for this dish is all about the disguise. My children will find this most amusing, because I don’t eat donuts. I call them DO NOT’s, do not eat the donuts. Continue reading
