That’s when I decided to turn it into Lasagna Soup. It was even better in a soup. So if you’re like me and you make too much lasagna, consider turning it into a soup for the next day’s lunch. With all the business of the Christmas Holiday I’ve been engaged with so many activities that cooking has not been a priority. Therefore, today I’ll be revisiting a simple salad that I make for Christmas every year. I hope you enjoy it again…next time I’m making it with fresh apricots and brie wrapped in bacon or pancetta… Continue reading

Overnight Oats with Chocolate Chips

This has got to be one of the easiest breakfasts to prepare. Layer it all in a little mason jar, screw on the lid and pop in the fridge overnight. I added chocolate chips to these little gems but you can add anything – blueberries, strawberries, raspberries; use different types of yogurts, even drizzle on some honey…whatever you want…they all end up delicious! Continue reading
Baked Crispy Calamari

My Hubby and I love Calamari. We especially love to have it sautéed. Mostly because it’s a healthier version vs the fried kind. Also it’s hit or miss when you do order it fried. Now it’s something we just make at home. It’s a way to ensure you’re getting just what you want. It doesn’t matter what you eat it with, but I served ours with an Orzo Florentine. Enjoy a super satisfying and super healthy way to have your Calamari and eat it too! Continue reading
Roasted Beef Tenderloin Meal: Revisited

Artichoke Appetizer Salad With Burrata, Brussels Sprouts & Pesto

I was watching a show about appetizers and the host used simple artichokes in oil and tossed them in bread crumbs then baked them… Well all I could think was, Why stop there! So I took them one step further and wrapped them in Pancetta and then added them to a salad for a great lunch! Continue reading
Turkey Spinach & Mushroom Tetrazzini

One of my favorite things about Thanksgiving is using up the leftovers. I don’t know why I wait all year to make Tetrazzini but every year that’s what happens. It’s just one of those comfort foods you think about after Thanksgiving. Well, here’s my version. Continue reading
