Ground turkey is like a chameleon to me… I call it the carnivores ‘tofu’. What is nice about this healthy meat is the way you can make it taste like anything you want. Today I was in the mood for something Asian and I had turkey burgers on the menu… so with a quick scan of my on hand Asian ingredients I kept with the menu and filled my craving too. My hubby was pleasantly surprised with this moist and flavorful spin on this turkey burger… Continue reading

Shrimp Tacos

Who doesn’t love tacos. I like to eat them with pork, beef, chicken and seafood. But today I decided to go with shrimp. Shrimp is a good ingredient on active days because it cooks quickly with little effort… and today was just one of those days. I added a little kick by taking my inspiration from south of the border. To make my life easy on days like this, I always make up different rubs to be used as needed. When I make a rub, I make extra and store it in a mason jar for later use. So today I’ll be passing on one of my favorite spicy rubs. It can be used on whatever meat you choose. Nothing to it… Continue reading
Tarragon Pork & Brandy Shallot Cream Sauce
It’s another beautiful Sunday! Yesterday we spent the day at the beach in the company of my brother Rob and his wife Maria and two of their children and it was a simply fabulous beach day! Today is a low-key, relaxing day to recover. On most Sundays my husband joins me in the kitchen with a glass of red wine as we create our family dinner. On today’s menu we have one of his favorites – Loin pork chops marinated with tarragon and served with a brandy cream sauce that is simply divine. This meal would be great served with a side of Heidi’s Cheesy, Garlic & Herb Riced Potatoes! Enjoy… Continue reading

Orzo With Pesto, Tomatoes and Green Peppers
I have so much basil that I spent this morning making tons of pesto. So for lunch today I made this little pasta dish for my honey and I. Veggies from the garden and a little help from the can. Although I have tomatoes from the garden, I used the cans to save time. Sometimes you just need to save time… Continue reading
North Carolina-Style Pulled Pork Sandwiches
I love that pork is so versatile! These tasty sandwiches are a great mid-week delight. In fact they are my son Andres’ favorite sandwich – if it were up to him we would have them every week. What’s great about them is that you pop them in the oven and walk away until they’re ready to serve. They are topped with a vinegar-based BBQ sauce and crunchy coleslaw. Can you say “Yum”? I can… Continue reading
Creamy Corn Chowder
This time of year I could seriously eat corn every day although we do make sure to have it at least twice a week. As you can imagine I buy more corn than we can eat at a sitting so corn chowder is something I look forward to making every year. You will also see my corn salad and salsa in the near future… Continue reading
Cheesy, Garlic & Herb Riced Potatoes
My husband seriously loves mashed potatoes! The last two weeks he’s been harvesting the delicious dirty little spuds . I’m so thankful he doesn’t ask me to help… So because he is so wonderful, I decided to make this creamy rich version of his favorite spud… Continue reading
Coffee Rubbed Rib Eyes
The first time I ever tried coffee-rubbed steak was at The Capital Grille. I had a Kona-Rubbed Rib Eye..Wow, what a steak! Mouthwateringly delicious. I wanted to try my hand at making these at home…Today’s steaks were not dry aged but that would certainly make them only that much better. These Rib Eyes were fresh from the Amish Market. They’re seasoned with a coffee-spiced mixture, grilled to perfection then topped with a Dos XX Amber reduction…now that’s the perfect steak! Continue reading
