Sopa de Carne

This hearty soup is a typical Latin American soup. It’s really just beef & potato soup but with a Latin flair! My mother-in-law used to make a similar soup for my oldest son when he was a little boy. She would serve everyone a big bowl but would put his in a blender and smooth it out…oh, so good! Sometimes I just wanted mine puréed too! But either way it’s comforting, warm and very hearty for a cool day such as today… Continue reading

Bacon & Gruyère Quiche

Bacon & Gruyère Quiche 3

Quiche used to intimidate me. Whenever I would order it out, you would get this tiny piece for a lot of money. I always figured it must be very hard to make… until I made it! Truth is, nothing could be more simple or versatile. You can put anything in it and it comes out perfect every time. Now I make it when I have people for brunch and everyone wants to know what I did to make my quiche so light and fluffy. Well, this is what I do… Continue reading

Decadent Lasagna With Bolognese & Bechamel Sauce

Decadent Lasagna With Bolognese & Bechamel Sauce

This Lasagna is out of this world as Linda and her boys can attest to. My hubby says it’s the best Lasagna he’s ever had and I for one love to eat it. It’s not the easiest lasagna to make but it is the best I’ve ever made. I always make it after I’ve made a traditional Bolognese. This is the perfect dish for a cold Sunday afternoon when you just feel like cooking… Continue reading

British Classic Steak & Ale Pie

On our first afternoon in London we visited Taylor & Walker’s Silver Cross Whitehall Pub located in the heart of London right off of Trafalgar Square. We were so excited to eat our first ‘English’ meal! We chose a British Classic – Steak & Ale Pie. They describe this pie on the menu as “A British classic with a Taylor Walker spin! 100% British beef, slow cooked in our rich 1730 pale ale gravy encased in crisp pastry. Served with mashed potatoes, fresh seasonal vegetables and a jug of gravy.” Each pie was individually sized and so hearty and flavorful…

Silver Cross in Whitehall's Steak & Ale Pie

When we got home this classic made it to this week’s menu. A larger pie feeds a whole family. Everyone thought it tasted rich & hearty. The end result: Delicious! Continue reading

Florentine Chicken

Florentine Chicken

Spinach is jam packed with nutrients and I love it! One of my favorite ways to eat spinach is Florentine Chicken. Although I do make it with fresh spinach sometimes, frozen spinach is just as good and certainly easier. It’s funny to me that I like spinach so much because when I was a kid I hated it. My mother always served it raw with these ginormous stalk like stems! This was before baby spinach became a household staple… Continue reading

Classic Tuna Noodle Casserole

Classic Tuna Noodle Casserole 4

Today is MEATLESS MONDAY…But just let me just start this blog post today by saying… I miss my grandmother. My Grandmother Born in 1915,  daughter to Irish immigrants, She was a force to be reckoned with and an extraordinary woman. I’ve yet to meet her equal! Smart, ambitious, stylish,  strong and a giver to a fault. She passed away last November three months before she reached 100 years old. What a chic! Well… Dorothy Veronica Alexis O’ Flynn Kufczynski (If you can believe it!) absolutely loved my tuna noodle casserole, so making it brings her always into my heart. Linda and I would spend two weeks in the summer with grandma and she loved to introduce us to new things. Lassie on Broadway, the nasty subway, hot dogs and sauerkraut and alas, yoo- hoo. I remember her taking us Christmas shopping in July on Broadway, my first pair of designer jeans. Not sure if I took them off for a year. She bought each girl in the family their first piece of fine jewelry. Going back to college at 50 (wanting to know what all the fuss was about), she taught us that women didn’t have limits and that loving and respecting the men we loved was a beautiful thing.  Linda and I were both graced with spending a lot of time with her in her later years. Linda especially went out of her way to do for my grandmother what this priceless, stubborn and independent woman could no longer do for herself.  We miss you Grandma and we love you! So this is for you Dorothy…

Good morning! My husband and I are on vacation in London & Paris!
