If you saw my post in late September I made Pink Peppercorn Pickled Onions. They are so delicious and pretty. I’m really into using them right now and put them on almost everything. They paired really well with these smoky tacos and I just loved the flavors together. Surprisingly I have a few heirloom tomatoes left too! Continue reading

Vodka Marinara Margherita Pizza With Fresh Oregano

Named after Queen Margherita of Savoy on a visit to Southern Italy (or so they say…) this dish has all the lovely colors of the Italian flag. Rather than make it the same old way, I added a little spin with vodka which I love in my sauce and oregano since I have more growing than I know what to do with…A lovely lunch or dinner for any day especially if you have it with a glass of Italian wine! Creamy Corn & Asparagus Soup

When the corn in season is about to be no more…I buy a few dozen, cut the corn off the cob then freeze the corn to be used in the fall and winter. So when I make this rich and creamy soup the corn is about as fresh as it gets this late in the season. And what I love about soups like this is they get better every day…You taste the sweet corn on the front of your bite and the asparagus at the end. Continue reading
Pear, Blue Cheese & Candied Pecan Salad

This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. I had to ask the boss to let me have them for a little while…It was a lot of fun and I was thrilled to show them my appreciation for all they do. Continue reading

Couscous & Hot Sausage Stuffed Peppers With A Rosa Bechamel

We do get a lot of peppers this time of year. Thankfully they are great to save in the refrigerator. I use them in everything…still, how do you improve a stuffed pepper? Use couscous instead of rice and steer away from regular tomato sauce. Continue reading
