These little treasures are great to make and have in the fridge for a plethora of occasions. I serve them at dinner parties and give them as gifts in pairs every Valentine’s Day to friends and family. Bizcocho de Caramelo

My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! Sometimes I like to check out restaurant menus to get ideas for dinner and desserts. The other day I was perusing the menu from Fuego Tortilla Grill in Texas – never been there but would love to visit one day…on the dessert menu I saw Magic Cookies with graham cracker crust, condensed milk, chocolate chips, shaved coconut and chopped pecans…sounded incredibly delicious! Come to find out that the original recipe came from Eagle Brand condensed milk. I’ve made a few adjustments to the original recipe, but they’re truly decadent!    Continue reading
