Chicken Cutlets With White Wine & Shallots

Chicken Cutlets With White Wine & Shallots

I love chicken especially when its been pounded paper thin, breaded then cooked to perfect tenderness. Chicken breasts tend to be a little dry. My hubby and I prefer the thigh, but when I serve it like a cutlet, it’s always a welcomed dish. I have also found over the years it is an economical and versatile way to use the breast because it serves many more people this way and you can change the seasoning in the breading and the sauce combinations. Today it was made with a simple reduction of white wine and shallots… Continue reading

Whipped Sweet Potato Delight

Whipped Sweet Potato Delight 1

As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese. From that Thanksgiving and every year after it has become a new tradition. And they are so good that I have to make enough for everyone to take some home. If you never like sweet potatoes unless they are in chip form or baked, try these… Continue reading

Honey, Mustard & Pepper Glazed Ham With Apple Chutney

Honey, Mustard & Pepper Glazed Ham With Apple Chutney 5

If you’ve been following Linda and I for a while now, you know that I am gifted several hams by my hubby’s clients every year. I have had to make ham in so many ways my brain hurts…but this is my favorite! I actually served this dish at a Small Plate Dinner on an evening we had guests. It was the perfect 4 or 5 bites that left you wanting more. Serving dishes on little 4″x 4″ plates is a fun way to make the ordinary exciting, (and to use your leftovers)! Your guests will think you spent days preparing… and in point of fact, you did!!! It was fun, delicious and enjoyed by all… Continue reading

Sweet Potato Pancakes With Maple Brandy Syrup

Sweet Potato Pancakes With Maple Brandy Syrup

One morning I was making pancakes and was pulling the ingredients out of the refrigerator when I spotted some of my leftover Whipped Sweet Potato Delight, (which I will be blogging later this week)…light-bulb!  Why not add the sweet potatoes to the pancakes! Well, a star was born. Sometimes I serve it with chutney, but today I decided to make a Maple Brandy syrup. Wow! Talk about breakfast with a kick! I hope you get the chance to enjoy these wonderful pancakes… Continue reading

Classic Chili Con Carne

Classic Chili Con Carne

It’s supposed to snow tonight in the Northeast. Here in New Jersey it will be our first big storm of the year…in fact of the whole winter season. We have been lucky to only get a dusting so far. So in anticipation of being snowed in over the weekend I made a tasty pot of chili. I have been making this particular chili con carne for thirty years now. So to me it’s a classic! I have made all different types of chili over these many years, but always come back to this one. It’s just that good… Continue reading

Jerk-Spiced Pork Chops & Jerk-Spiced Rice

Jerk-Spiced Pork Chops

Great minds think alike! Heidi shared a great pork tenderloin recipe yesterday and pork is on the menu again today. It’s a healthy alternative to beef!

I really like Jerk seasoning and haven’t made it in a while…with this meal I decided to not only marinate the pork chops in the jerk seasoning but to also make a rice with the same marinade. It turned out great! Here’s another addition to the Pork Night Repertoire!

Note: My mom recently came to visit me for a few days and she brought along with her some lovely linens…she wanted me to use them for our blog! She’s such a sweetie…so Mom, here’s the pink one…Thank you for giving me such lovely linens!!    Continue reading
