Sancocho

This traditional chicken soup warms the cockles of your heart…and your hangover, if you’ve got one! I first had a Sancocho in Panama many years ago and have a bowl every time we go back to visit. Recently I saw frozen Yucca in our local supermarket and popped it in my cart to make this delicious soup at home. It’s my husband’s favorite reminder of home and he was so happy that I made it for him! We usually serve Sancocho over a bowl of cooked rice…yum!  Continue reading

This is a dish my mother made for us growing up. Probably created from one of those 70’s throwback cookbooks. I often cringe at some of the ingredients they recommended. Obviously ‘processed’ was the star in every dish. It was surely economical for a family of six however, and mother was always health conscious. I will admit that when I was 7 and this plate was put in front of me… I know I made an awful face!… Alas, we grow up and learn to love the very dishes we shunned as kids. I’ve been to several different restaurants recently that have Brunch Burgers on their menus. Although I didn’t order them I was intrigued by the addition of the fried egg. So in today’s burger I’ve assembled the flavors of a breakfast sausage and added maple bacon, fried egg and tomato jam (from Monday). WOW! I’ve been won over!

Lasagna Mac & Cheese

Lasagna Mac & CheeseMac & Cheese is a real treat and can be made so many different ways. It’s also a great way to use up leftovers. When I made the wonton ravioli I was left with too much ricotta cheese so I decided to turn it into mac & cheese. Placing them in individual sized dishes is a great way to portion control. My sister in law Soraya once gave me a jar of homemade Tomato Marmalade – it was so very good! We used it as an appetizer with crackers and cream cheese…yummy! So I recently decided to try my hand at making it…but as I like things simple and quick, and I did not want to make a lot, I started with a can of Fire Roasted Tomatoes. The results were divine! We used half of this delicious jam with crackers and cream cheese and the other half I used for a recipe I’ll be sharing on Wednesday!    Continue reading

Who doesn’t love spaghetti and meatballs! When making it for guests I always had this giant doubt about it. Growing up, it was the one night you never wanted dish duty! Especially when your parents paired you, (me the youngest) with the only boy. My brother had a very good system for looking very busy without doing anything… Seriously, just ask Linda. Anyway, I decided once to just roast the whole thing so I could enjoy my guests and not look at my kitchen with embarrassment as if a peck of tomatoes had just exploded.
