On Wednesday I made a terrific Spinach & Creamy Spinach Soup. Today’s soup is equally delicious but with a kick! It’s the perfect blend of sweet and hot! The corn brings this beautiful sweetness at the front, then after two or three bites you start to notice a little heat! A very balanced corn soup. Kung Pao Chicken

Kung Pao Chicken is a traditional Chinese dish believed to have originated in the 1800s in the Sichuan Province. Diced marinated chicken, peanuts & chili peppers along with Sichuan peppercorns are the original ingredients. Sichuan peppercorns are available for online purchase but I’m all for ease and simplicity. So, for today’s recipe I’ve adapted those ingredients and used ones directly out of the local supermarket. Today’s chicken is marinated in a mildly spicy combination of Asian Szechuan sauce, hoisin sauce, Tamari soy sauce & five spice powder. To pump up the health factor, tri-colored peppers & broccoli have been added to the stir fry. End result? Delicious! Continue reading

It’s Taco Tuesday! My favorite day of the month when I experiment with new and different flavors for tacos…This is another taco that I found on a menu from Fuego Tortilla Grill. I’ve never actually been there but I sometimes will spend time just perusing restaurant menus to get ideas and this one grabbed my attention. It’s called Cowboy Tacos and it listed Dr. Pepper BBQ sauce as one of it’s ingredients…that sounds tempting…doesn’t it!? But why let all the Cowboys have the fun? You heard me… so I filled them with a beautiful crab mixture, boiled them and presto they were ready! Salmon with Herb Gremolata

Today I’m sharing a tasty and healthy salmon dish. As mentioned in a previous post, Gremolata is an easy and healthy way to add tons of flavor to any dish. Gremolata is simply a combination of garlic and fresh herbs with lemon. I’ve substituted lime for the lemon in today’s recipe and fresh parsley, oregano and thyme are the herbs of choice. A squeeze of lime juice is the final ingredient to finish off this lovely salmon meal.  Continue reading
