It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. He never eats the rice so I just thought…peppers… rice… stuffed pepper soup! I used ground turkey because that’s what I had on hand. It turned out so good and my Hubby went wild for it! Here’s another classic dish…Tortellini with Prosciutto & Peas…after doing a little bit of research I found that the tortellini noodle has an obscure history. The story goes that a beautiful woman stayed at an Inn in a small town in the Providence of Modena. The Innkeeper was so captivated by her beauty that during the night he peeked through the keyhole to her room and saw only her navel…inspiring him to create this noodle. Crazy story! Today I’m revisiting one of my favorite Mac & Cheese dishes. Originally posted almost two years ago, this is comfort food all the way….STOP THE CLOCK AND TAKE THE PHONE OFF THE HOOK!!! This is a nice dish to make when you have guests over. It can be prepped in advance so when your guests arrive it only needs a quick sear and a toss in the oven. It’s also good for lunch with the girls as small plates. All I did was slice them up when done and served just a few slices with salad on the side. They go a long way and are loved by all. Sirloin Steak Panini

Our local pizza & sandwich joint has a very tasty Flank Steak Panini on their menu that I’ve been ordering for years. I finally decided to just make it at home – tweaking it until it was just right. I’ve never been a big fan of flank steaks because they end up being very fatty…so I use sirloin instead, marinating it and grilling it and adding sautéed marinated red onions, sharp cheddar cheese, tomato, arugula and a smear of black pepper aoili…all piled on toasted rustic sourdough bread…This is the perfect pick-me-up when I’m in the mood for a tasty lunch!
