We spent Easter afternoon at the Country Club for their excellent and over the top buffet… A wonderful break for me to not have to cook. One of the many options to choose from was this delicious bite of Eggs Sardou. Both my Hubby and I liked so much that he asked me if I would recreate the dish at home for breakfast. Classic Moussaka


We are huge fans of Greek food…I make a lot of it at home and we also head over to our favorite Greek spots a few times a month (Estia Taverna and Black Olive)…but had never made Moussaka at home until this past weekend…I didn’t want to follow anyone else’s recipe – I knew the flavors very well since I’ve eaten it many times at restaurants…so I sat down and wrote my ideas out in my cooking notebook…shopped for all the ingredients ….then gave it a whirl on Sunday afternoon. It turned out superb! Definitely restaurant quality (can I toot my own horn and say even better than restaurant quality?!) I roasted the eggplant and baked the layer of potatoes before assembling the remaining layers; bringing out the delicious flavors of both, while the beef simmered in a tomato sauce seasoned with cinnamon, allspice and ginger. The final layer is a custard-like béchamel sauce topped with a mix of shredded cheeses…truly scrumptious! Continue reading

Savory Chicken Pie: Revisited


Heidi and I are headed into New York City today to do some shopping and sightseeing…we’re meeting up with my hubby, who works on Madison Avenue, for dinner along with my cousin Dan and his new wife Nisrine…We’ll be eating Greek tonight…my favorite! Crispy Bacon, Shallot & Fontina Flatbread

I like to eat a good flatbread for lunch sometimes so I’m constantly thinking of different ingredients to top them with…this Crispy Bacon, Shallot & Fontina Flatbread is one of those ideas that popped into my head when I passed the Fontina cheese in the supermarket. For today’s flatbread I used a loaf of ciabatta bread sliced horizontally; kind of like a ‘French Bread Pizza’…It was tasty on its own but when I drizzled it with the Balsamic Glaze it just pushed it over that edge to super yummy!
