Moo Goo Guy Pan

When we were younger my mother was a very good cook. She was ‘self taught’ and read a lot of magazines about food. In the 70’s grocery stores in rural Pennsylvania didn’t have big ethnic sections, you had soy sauce and not a whole lot more. Today there is so much more to choose from. Well, I’ve remade this childhood favorite with a few added ingredients. Continue reading
Blueberry & White Chocolate Chip Cookies
I recently picked up a bag of dried wild blueberries and wasn’t sure how I was going to use them until I traveled down the baking aisle and saw the white chocolate chips…then it hit me – cookies! The tartness of the blueberries work perfectly with the sweet white chocolate in these yummy cookies… Continue reading
Eggplant ‘Meat’Balls & Creamy Polenta
These ‘Meat’Balls are so good! I substitute these for beef when I have my vegetarian friends over…using them in sandwiches (think Meatball Subs) and over pasta (think Spaghetti & Meatballs). They’re so full of flavor that they fooled my friends – I personally think they taste way better than beef meatballs! If you haven’t given them a try you definitely should… Continue reading
Chicken Thighs with Creamy Mustard Sauce
This delicious chicken dish is wonderful to serve on one of these cold nights! Creamy and a little bit decadent… Continue reading
Portobello Mushroom & Squash Parmesan
I love the meatiness of portobello mushrooms…they are wonderful when used in a dish to serve on one of your Meatless Meal nights. They’re very hearty – and in this dish there are so many flavors that you don’t even miss the meat! Continue reading
Pesto Chicken & Quinoa Salad
This is a tasty meal that used to be on Brio Restaurant’s menu…I’ve made some adjustments – roasting the asparagus, chickpeas and tomatoes and nixing the cucumbers…I also marinate the chicken in the pesto before cooking it in a cast iron skillet. Toss it with a creamy herb dressing or any salad dressing of your choice. It can be served as a salad or in a bowl… Continue reading
Chicken Mole Chili

Nothing says welcome to Autumn like a good bowl of warm chili…I’ve taken my Classic Chili con Carne and meshed it with my Chicken Mole Poblano to create this hearty and delicious Chicken Mole Chili…served with creamy rice or corn bread, it really heats up your day! Continue reading
Tourtière (Canadian Meat Pie)
I’ve been making this dish for over thirty years…I always just called it Beef Pie…recently I saw a recipe with very similar ingredients called Tourtière…which is actually a Canadian dish made with beef and potatoes that originated in the Provence of Quebec – the vessel it is made in is called a Tourtière…so now I’m calling my dish Tourtière too! It’s another one of my hubby’s favorite meals as it’s very hearty and perfect to serve in early Autumn… Continue reading
