It’s Burger Time! Having a burger doesn’t mean you have to eat unhealthy! I love Ratatouille – a traditional French vegetable stew made with eggplant and zucchini and other healthy veggies. With the remaining Jersey Fresh Produce from my recent Ride the Farm event, I’ve deconstructed a Ratatouille and roasted all the veggies together, grilled some seasoned chicken burgers and topped them with the roasted ratatouille – making this meal not only absolutely delicious but definitely healthy! My sister in law Soraya once gave me a jar of homemade Tomato Marmalade – it was so very good! We used it as an appetizer with crackers and cream cheese…yummy! So I recently decided to try my hand at making it…but as I like things simple and quick, and I did not want to make a lot, I started with a can of Fire Roasted Tomatoes. The results were divine! These Mexican beef burritos are so moist and delicious I’m surprised I don’t make them more often. I think the last time I made them was for Super Bowl XLIX and it was a huge hit. Great for tailgating too because it can be made in advance and kept warm in a crock pot. I made it this week for a family get together. This dish is prepared in one pan, easy to make and clean up so I can enjoy my guests when they come. Arroz con Pollo was the first Latin meal I ever tried. Many years ago, I was visiting my husband’s family in Panama and was served this simply delicious meal. I tried recreating it when we got home. After many years of tweaking the recipe, and although it may not be made the same way as they make it in Panama, I believe that the end result is perfection! I love this time of year! The days are warm with a beautiful breeze and the evenings are just a little cool. Fall is approaching, the garden is slowing down and the Brussels sprouts will be here soon. This is the time of year when I like to make my own tomato sauce. Although we grow a lot of tomatoes, we did not grow any Roma tomatoes this year. So off I went to the growers market to buy a bushel of meaty Roma tomatoes. Just a tip for my sauce, I do not use any herbs in this first round because I use the sauce in so many different ways. When I am making a dish, that is the time I choose the seasoning and herbs. Chicken Caprese


I recently visited with my sister Heidi and she gave me an abundance of veggies! In this recipe I used some of her beautiful fresh tomatoes…so delicious! If you like Caprese Salad (the combination of fresh tomatoes, mozzarella and basil) you’re going to love this Chicken Caprese. I used smoked mozzarella and topped the chicken with sweet onions sautéed in a balsamic-honey sauce. Very light and very tasty… Continue reading
