Who doesn’t love tacos. I like to eat them with pork, beef, chicken and seafood. But today I decided to go with shrimp. Shrimp is a good ingredient on active days because it cooks quickly with little effort… and today was just one of those days. I added a little kick by taking my inspiration from south of the border. To make my life easy on days like this, I always make up different rubs to be used as needed. When I make a rub, I make extra and store it in a mason jar for later use. I remember eating barbecue shrimp at Ruth’s Chris for the first time many ears ago. Now I make my own version that has just the right amount of sweet, salt and heat. My husband said this shrimp was a 10 out of 10. We had broccoli, lettuce and sugar snap peas straight from the garden. I like to butterfly the shrimp for this dish, somehow it just feels like ‘more’. I love being able to use leftovers to create something entirely different! The other day I made Penne with Pancetta & Brandy Tomato Cream Sauce. We had some leftover sauce so I used it to make a quick shrimp & crab meat pasta! It has now become Raf’s favorite pasta ever! Sausage & Shrimp Pasta with Spinach Pesto

We had to redo our pool last year (I recommend salt water, I love it), and put in new retaining walls around the grounds. I had the brilliant idea of surrounding and mounting all sizes of ceramic pots everywhere. Now it is my duty to fill them with flowering plants. All 32 of them! Although this year I am more cognizant of what I’m planting, it is still a lot of work. All that aside, I wanted to order out tonight, but instead… I opened my refrigerator and freezer to take an account of what I could create that was simple and delicious. So here is what was created. When we were growing up, we had a house boat on the Susquehanna River and our parents loved to entertain on the weekends. Mom was in charge of everyone being well fed and there were always plenty of weekenders to feed. One of my favorite dishes she made for the beautiful summer days on the river was her Salad Nicoise. I would call this a French version of an antipasto. I loved my mother’s 1980’s version of this classic salad, but I must admit I gave it a 2015 twist.
