Who said tasty can’t be healthy! These little veggie bites really pack a flavor punch along with a fiber punch. Using Lima beans as the base, I pureed them up to make a creamy sweet spread. Add some roasted tomatoes and a sprinkle of cheese and you have the makings of a very good and healthy appetizer. Put a little hard boiled chopped up eggs, and this would also make a great breakfast. A little trick I use when I want to make ravioli and I just don’t have time to make my own…wontons! You heard me… so I filled them with a beautiful crab mixture, boiled them and presto they were ready! I love to make homemade pasta on cold windy days when you just want to stay indoors and hibernate. So when I get that inclination, I go to town creating the food I desire. If you want to make your own fresh pasta, use my earlier post Pasta Made With Love, I don’t usually buy tomatoes this time of year, but the Roma’s looked so roast-able I couldn’t resist.
