Homemade Gnocchi In A Classic Marinara Sauce

Homemade Gnocchi In A Classic Marinara Sauce

Okay, I think it’s fair to say that since Thanksgiving I’ve been on a sort of Italian kick. So today I made my homemade Gnocchi. I used to make this with my daughter as my helper because it is a process to make and her favorite dish. Alas, she is grown, moved away and enthralled in planning a wedding… so today I made it alone. No worries…with a few altered steps (the freezer) it was a cake walk… a messy cake walk, but still cake…well gnocchi, but you get what I’m saying… Continue reading

Pappardelle with Roasted Butternut Squash & Sage Sauce

Pappardelle with Roasted Butternut Squash & Sage Sauce

Today is MEATLESS MONDAY! Last time I visited New York City I stopped by Eataly and grabbed a bag of  my favorite Pappardelle. For some reason I have a really hard time finding this pasta near my home so every time I can I’ll stop by there and pick up a bag. These long pasta ribbons are perfect for this roasted butternut squash & sage sauce on this cool December Meatless Monday… Continue reading

Pasta Ricotta

Today is MEATLESS MONDAY! Pasta is probably the easiest dish in the world to make, which is why everyone loves to make it. Cappellini With A Traditional Bolognese Sauce

Cappellini With A Traditional Bolognese Sauce

Monday dinner was an Italian meatless spaghetti squash dish which was excellent. However, that put my hubby and I in the mood for a serious Italian meat dish. (Lightbulb)… A traditional Bolognese sauce. I only make this dish a few times a year because it is so rich. In the throws of winter I make it with a creamy Polenta because it just screams comfort, but in the summer I make it with a light and simple Cappellini.  You need to start early with this sauce because it takes up to three hours to prepare. It is a great dish for Sundays but it is not Sunday and I want it all the same… Continue reading

Spaghetti Squash & Fresh Tomato & Basil Sauté

Spaghetti Squash & Fresh Tomato & Basil Saute

Today is MEATLESS MONDAY! When I was in college many moons ago, I spent a period of time ‘being’ a vegetarian. I only lasted about a year when I started craving rare beef… I did however develop a love for vegetables and a true appreciation for meatless meals. Although I used to buy my spaghetti squash, now we grow our own… Continue reading
