Eggplant ‘Meat’Balls & Creamy Polenta

These ‘Meat’Balls are so good! I substitute these for beef when I have my vegetarian friends over…using them in sandwiches (think Meatball Subs) and over pasta (think Spaghetti & Meatballs). Smoked Mozzarella, Grilled Asparagus & Tomato Flatbread

Today’s Flatbread is so easy and delicious! I grilled the asparagus and tomatoes and used fresh smoked mozzarella and shredded parmesan to add a nice flavor to the flatbreads then popped them into the oven until the cheese melts…so good…

Farro Salad with Roasted Veggies, Peas & Fresh Parmesan

I’m trying to start the year with a healthy bang! I saw a Farro Salad similar to this on the menu at Davios NYC and made a note to try something like it at home…I roasted the veggies to bring out their flavor and dressed the salad with a Lemon Garlic Vinaigrette that’s super yummy.
