On Monday we cooked up some delicious Italian Turkey-Capocollo Meatballs…with the leftover meatballs we made some fantastic meatball sandwiches. A hearty sandwich filled to the brim with freshly sliced Parmesan cheese, Italian Meatballs, sauce & grated Parmesan. We love our Wawa meatball sandwiches but ‘Man, oh Man’ were these so much better! Who doesn’t love spaghetti and meatballs! When making it for guests I always had this giant doubt about it. Growing up, it was the one night you never wanted dish duty! Especially when your parents paired you, (me the youngest) with the only boy. My brother had a very good system for looking very busy without doing anything… Seriously, just ask Linda. Anyway, I decided once to just roast the whole thing so I could enjoy my guests and not look at my kitchen with embarrassment as if a peck of tomatoes had just exploded. Ok, ok… I know this might seem a bit parochial, but I think it’s a real time saver for the holidays. Meatball Sliders! My mother always fried her meatballs before she put them in the sauce, but I don’t. I put them into the sauce raw and let them flavor the sauce. Take note, I don’t use a fatty meat. Quite a few years ago I made my first venture oversees…to Sweden! It was a beautiful time of year – not yet cold enough for heavy winter coats – kind of like today’s weather here in NJ.
