Salmon Canape Bites

Salmon Canape Bites

We are still enjoying summer poolside and I love to have my friends over several times a month to sip cocktails and have appetizers. I have learned to let the girls bring some of the goodies… but I also like to have a few goodies of my own. So here is a little snack I made for one of our poolside afternoons. Continue reading

Herb Marinated Curly Shrimp With Fresh Dill Flowers

Herb Marinated Curly Shrimp With Fresh Dill Flowers
Dill grows wild in my herb garden and I have a lot of it. One of the things I love about dill are the yellow flowering dill tops. These flowers are not only beautiful, but they are also edible. They have a very concentrated dill flavor and look stunning on any plate. If you have dill in your garden I encourage you to use the flowers. Just for fun and to impress my lunching friends I cut the shrimp in half lengthwise so when I cooked them they would curl up. It also creates a better bite for a salad or appetizer.  Continue reading

Skirt Steak with Caramelized Red Onions & Chimichurri

The first time I ever tried skirt steak was at one of my favorite restaurants in Philadelphia, Alma de Cuba. What a flavorful piece of meat! They serve a fabulous Vaca Frita; pan seared skirt steak with a side of black beans, white rice and tomato escabeche. Delicious! Since we recently had our nephew-in-law Aquilino visiting for the evening, I decided to recreate this meal for my husband and our guest. My recipe is a mixture of Cuban and Argentinean flavors since I topped it off with caramelized red onions and a delightful chimichurri sauce. Loving the flavors of the chimichurri, I decided to make a rice that combined those ingredients. Alongside the Skirt Steak and Chimichurri Rice, I served red beans and maduros. It was a big hit with the guys!    Continue reading

The plants are beautiful, but so are the weeds. Lol! Linda visited last week and I gave her a tour of the gardens, so perhaps she will comment on all the beautiful plants growing. Since I love a good cucumber salad, today I used herbs and onions that I picked in the rain.    Continue reading
