It’s Burger Time! Having a burger doesn’t mean you have to eat unhealthy! I love Ratatouille – a traditional French vegetable stew made with eggplant and zucchini and other healthy veggies. With the remaining Jersey Fresh Produce from my recent Ride the Farm event, I’ve deconstructed a Ratatouille and roasted all the veggies together, grilled some seasoned chicken burgers and topped them with the roasted ratatouille – making this meal not only absolutely delicious but definitely healthy! Our Tri Club recently had a Ride the Farm event that I was lucky enough to enjoy with my husband and some friends. During the 22 mile bike ride we visited a few farmer’s markets and were able to purchase some beautiful produce…isn’t summer grand? All those fresh fruits & veggies! Heidi is so lucky to have a garden full of all those goodies in her own backyard…and I’m lucky to live so close to these great markets: Sorbello Girls, Visalli’s & Haynicz’s. Today is MEATLESS MONDAY! This dish is like a deconstructed eggplant lasagna or kind of like a layered Gâteau. Truly delicious and great for a Meatless Monday meal.
